Our commitment to chicken
At Bijinbdori, we use “Kinsou-dori,” a domestic brand chicken produced in Chiba Prefecture, which won the grand prize in the “Jidori/Brand Chicken Favorability Rating Contest” in 2007. The Chunky chickens are fattened for about 50 days for both sexes by feeding them a special feed containing wood vinegar, and they are taken apart by hand and externally skinned to avoid damaging the meat, liver, and gizzards.
Our unique feed design reduces the distinctive smell of chicken meat, resulting in thinner skin and less fat. The meat has a surprisingly tender and fluffy texture that goes well with the mizutaki (rich chicken hot pot) broth.
